    ‘Unauthentic’ Tabbouleh with Couscous and Tuna

    Our tasty twist on traditional Tabbouleh! With the addition of filling tuna and the fresh summery flavours of mint and lemon, this is a salad that's a meal in itself.

    Tabbouleh is a Mediterranean dish that consists of bulgur and all different veg (usually tomatoes and parsley). When it starts to get warmer outside, the last thing anyone wants to do is stand over the hob and cook up a full meal. If you can relate, why not try out this refreshing salad that was made to be enjoyed in the heat?

    What you'll need:

    • 125 grams of couscous
    • 145 grams of tuna
    • 150 grams of baby plum tomatoes
    • 128 grams of chopped onion
    • ½ cucumber
    • 1 lemon
    • 64 grams of chopped fresh mint leaves
    • 20 grams of fresh parsley
    • 6 tbsp of olive oil
    • ½ teaspoon of sea salt

    Step 1

    First, you’ll need to bring 250ml of water to boil in a pan. Gradually pour in your couscous and salt while giving it a stir. Leave it to cook for around 10 minutes. Remove the couscous from the heat, cover, and leave it to stand for five minutes.

    Step 2

    While you’re waiting for the couscous, finely chop up your onion, tomatoes, cucumber and parsley. Then, drain your tuna.

    Step 3

    Fluff your couscous with a fork and add in all your tuna and vegetables. All you’ll need to do then is squeeze in the juice of half a lemon, pour in your olive oil and give it a final stir before serving up with a sprinkle of mint.

    Top tip: Leave it in the refrigerator for a while to let all the flavours blend together.
