    Welcome to the new year. I hope you’ve all had a wonderful Christmas (it already seems so long ago, or is that just me?) and are looking forward to cooking up a storm in 2017. I know that getting back into the swing of things after the festive season always feels a little tough and on top of that, we’re suddenly supposed to give up all the treats and sweets and go on some sort of detox. Add to that cold weather and short days and you have the perfect recipe for feeling down about January…

    So, why not keep some of the sweet treats, just make them a little healthier? Since energy is one of the things we often feel is in short supply at this time of the year, let’s try and get some of it back in a pleasurable way. Now, what’s pleasurable when it comes to food is different for every person, for me personally there’s nothing worse than having to down a glass of cold detox juice on a frosty morning. I’d rather have something sweet and comforting. This is where these little energy balls work so well. And since giving up chocolate completely from one day to the next seems a little draconian, I’ve decided that a hint of it would make these taste even better. The combination of fruit, nuts, good oils and honey will boost your energy and make you feel like you’re treating yourself – in a healthy way. What’s not to like?

    Here's what you'll need...

    • 50g almonds
    • 50g dried apricots
    • 30g tahini
    • 50g honey
    • 1tsp vanilla essence
    • 1tbsp cocoa

    Here's how it's done... Step 1

    Put all ingredients except the cocoa into a food processor

    Step 2

    Process until all ingredients are combined and in small pieces

    Step 3

    Scrape the mix out from the food processor. Form into small balls between the palms of your hands.

    Step 4

    Put into a bowl and serve.
